Egg substitutes, et al.

I know no one cares, but the flax seed egg substitute works pretty well in cookies. I think there was a slight difference in texture, but if I hadn't had them before I would have never guessed.
EnerG egg substitute and the baking soda and oil combination don't work so well in cakes, but I haven't tried them in cookies yet. The former serves as a mediocre substitute for breading fried things. A can of pumpkin mixed in with a cake mix works really awesome to make kind of dense cupcake muffin things. I may have to compile some sort of list as I experiment. I keep running across militant vegan websites in my quest for something that will work, and they scare me.
I'm still unemployed and living with my parents. This is getting to be a rather dire situation, as I'm going through one of my nesting phases. I want to buy curtains, and towels, and I've found the most fabulous toothbrush holder! But I've no place to put these things, and no paycheck to buy them with. That, and I really miss cable internet.

Date: 2007-05-17 06:56 pm (UTC)I don't like splenda in the things I've tried it in. I haven't tried it for baking, but mom bought some granola bars with it, and they're just a little strange, like they're too sweet or something.
